Ingredients

    2 5oz cans Solid White Albacore Tuna
    1 can Cannellini Beans
    2 clove Garlic, minced
    2 Tbsp Lemon Juice
    1 Tbsp + 1 tsp Lemon zest
    1 tbsp Extra Virgin Olive Oil
    3 Tbsp Dijon Mustard
    2 tbsp fresh Basil, chopped
    5 Black Olives, chopped
    2 Tbsp chopped Onions, raw
    2 Tbsp Parsley, fresh & chopped
    8 slices 45 calorie bread
    1 cup, chopped Watercress

Directions

In a small bowl, coarsely mash the beans with the olive oil and 1 Tbsp lemon juice. Stir in the garlic, 1 tsp zest, 1 Tbsp mustard basil, salt, and pepper. In a another small bowl, flake the tuna with a fork. Stir in 2 Tbsp mustard , parsley, 1 Tbsp lemon juice, 1 tsp zest, olives, onion, salt, and pepper. To assemble: spread 1/4 of the bean mixture on each slice of bread, top that with 1/4 of the tuna mixture and watercress, and finally, another slice of bread. P.S. I toast my bread so it doesn't get soggy
