Introduction

Celebrating the Summer with gluten free and vegan Fudge Cookie Bites! Made with a strawberry-pear sauce (or applesauce) they are a great two-bite treat for adults and kids alike! Number of Servings: 30

Ingredients

    ¾ cup sugar
    ⅓ cup unsweetened cocoa powder
    ¼ cup coconut oil, very soft (mine was semi-melted)
    4 oz (by weight) unsweetened applesauce
    1 teaspoon vanilla extract
    1¾ cups gluten free flour
    1 teaspoon baking powder
    ¼ teaspoon salt
    your favorite sprinkles


Directions

Heat oven to 375F and line two cookie sheets with parchment paper or silpat. Set aside.
In a large bowl, beat together the sugar, cocoa, coconut oil, applesauce and vanilla.
Add the flour, baking powder and salt and beat until well combined.
Pour your sprinkles into a shallow bowl.
Use a small cookie scoop or your hands to shape the dough into approximately 30 small balls (marble size) and roll in sprinkles to fully coat.
Place on the prepared baking sheets, approximately 1" apart.
Bake for 8 minutes, until set.
Remove from oven, allow to cool for a minute on the baking sheet, then transfer to a wire rack to cool completely.
