Ingredients

    0.5 cup Butter, softened
    1.0 cup Granulated Sugar
    2.0 large Egg
    1 2/3 cup Flour
    1.0 tsp Baking Powder
    0.5 tsp Salt
    0.5 cup Milk
    1.0 cup Blueberries, fresh
    0.5 tsp lemon zest

Directions

Preheat oven to 350 degrees. Grease a 9x5x3 loaf pan. Whisk together softened butter & sugar; beat in eggs. In a separate bowl, sift flour with baking powder & salt. Add to butter mixture alternately with the milk. Mix until just combined. Fold in blueberries and lemon zest. Pour bread batter into prepared pan and bake in a 350 degree oven for 50 minutes. Cool on a wire rack for 10 minutes, then remove from pan. Cool completely.

Serving Size: Makes 8 1 inch thick slices
