Ingredients

1.25 cup Flour, white
1 stick Butter, unsalted
2 leek Leeks
1 clove Garlic
1 cup, pieces or slices Mushrooms, fresh
3 oz Chicken, rotisserie cooked, breast meat, no skin
2 oz Goat Cheese, Semisoft
2 fl oz White Wine

Can be adapted depending upon available ingredients
Directions
Preheat oven to 425 degrees
Grate cheese
Cut up chicken
Sauté leeks, mushrooms
Deglaze pan with white wine and reduce
Roll out pie crusts and place in pie plate
Layer cheese, leeks & garlic, mushrooms and chicken in the pie plate
Add reduced wine
Place top crust, if using it.
(this could be made without a top crust, as a galette, for example)
Bake at 425 degrees for 30 to 40 minutes
Serving Size: makes 8 to 12 servings
