Ingredients

1 lb beef strips (cut of your choice, just cut into small strips)
1 white onion, thinly sliced
1 c white mushrooms, thinly sliced
1 T coconut oil
1/2 t salt (optional due to gravy packet)
1 t pepper
8 oz pkg sour cream (full fat or light)
1 pkg brown gravy mix
1 pkg Shirataki noodles (fettuccine style, prepared according to package directions)
Directions
In the bottom of a slow cooker, put your coconut oil.
Add onions and mushrooms and sliced beef. Season with salt and pepper or add gravy packet and pepper.
Slow cook on low until meat and veggies are tender. When meat and veggies are done, move top to release some of the heat. When the heat has subsided a bit, add your sour cream one tablespoon at a time and stir it until everything is to your liking. (My son likes a LOT of sour cream, I like little a bit). Taste your hard work and season it to your liking.
Prepare your noodles according to package directions, drain and set aside. Let your meat sauce sit for a bit so the flavors can mesh. After that has occurred, ladle some of the meat sauce over as much of the noodles as you'd like.
