Ingredients

    0.5 cup, chopped Onions, raw
    1.0 cup, sliced Summer Squash
    1.0 cup, sliced Zucchini
    0.5 cup, chopped Carrots, raw
    0.25 jumbo Black Olives
    1.0 gram(s) bell pepper, red, sweet, raw
    0.5 package (10 oz) Broccoli, frozen
    112.0 gram Jennie-o turkey breakfast sausage
    2.0 oz Athenos Reduced Fat Feta Cheese
    1.5 cup Aldi Fit and Active Egg Substitute

Directions

Cook sausage. Chop veggies and saute. Spray cast iron or oven proof skillet with spray. Add sausage back to pan. Add egg substitute and cook until almost set. Put in oven at 375 until set and lightly brown.
