Introduction

This recipe is REALLY good, and nice and light. The angel food cake is so moist and soaks up the flavor of the pudding and fruit. Really tasty. Ingredients

    1 8" Sugar Free Angel Food cake, cut into bite sized cubes
    1 box sugar free vanilla pudding
    1 small can crushed pineapple
    2 cups strawberries, sliced
    1 small container fat free cool whip
    2.5 c. skim milk

Directions

Cut the cake into cubes and sprinkle over half in the bottom of a 9x13 dish. Open and drain the pineapple, reserving about 1/4 c. of the juice. Mix the pudding mix with the milk and the 1/4 c. of pineapple juice. Add one cup of the cool whip.

Spread enough of the pudding mixture to cover the top of the cake cubes. Put a thin layer of the strawberries on top. Repeat layers one more time and top with the remainder carton of cool whip.

Makes approx. 14 large servings.
