Ingredients

    2 serving Old Fashioned Quaker Oatmeal- Plain (1/2 cup dry)
    3 serving Guittard Extra Dark Chocolate Chips (30 chips)
    72 tsp Coconut Palm Sugar, Sweet Tree (by CARREOMI)
    2 cup Wheat flour, white, all-purpose, unenriched
    1 tsp Salt
    1 tsp Baking Soda
    1 tsp Baking Powder
    1 tbsp Cinnamon, ground
    1 tsp Cardamom, ground
    3 large Egg, fresh, whole, raw
    .5 cup Canola Oil
    8 tbsp Olivado Avacado Oil (by LIVINGTHIN)
    3 tsp Vanilla Extract
    2 cup Zucchini (Grated) (by STEFANIE822)
    16 tbsp chopped walnuts

Tips

I grind the oatmeal to a more flour like state and have the nuts chopped for a finer consistency


Directions

mix wet ingredients, mix wet ingredients. add dry to wet ingredients. stir in in zucchini, nuts, and chocolate chips.
cook in muffin tins for 20 minutes or until done.
