Introduction

Using the bagged pasta and peas makes this a super quick meal to prepare. I added the onions, pepper and ground cumin to give it a southwestern flavor, since the cheese I was using was a Fiesta Blend. Ingredients

    1 bag frozen Hanover Rotini & Peas
    1 can (10.75 oz) Cream of Chicken Soup,
    1/2 cup Milk, 1%
    1 cup cooked Chicken Breast diced
    1/2 cup, shredded Cheddar or Colby Cheese, Low Fat
    1/4 cup Onions, raw
    1/4 cup Green Peppers (bell peppers)
    Salt and pepper to taste
    Ground Cumin

Directions

Cook Hanover Rotini and Peas according to package directions for microwave. Remove from microwave and add the cream of chicken soup, water or milk, cooked chicken, shredded cheese, onions and peppers. Stir to blend.

Heat an additional 2 to 4 minutes in the microwave (or you can bake at 350 for 20 minutes). Stir well before serving.

Makes 6 one cup servings.
