This takes a little time getting all the ingredients to stuff the peppers with ready, but it's sure worth it. These are yummy. This takes a little time getting all the ingredients to stuff the peppers with ready, but it's sure worth it. These are yummy.
Number of Servings: 6

Ingredients

    6 red or green bell peppers
    2 lb ground round (85/15)
    1 cup chopped onion
    1 can stewed diced tomatoes
    1 cup cooked brown rice
    2 tbsp worcestershire sauce
    1 cup shredded 2% mild cheddar cheese
    1 can tomato sauce (8 oz)
    salt
    pepper

Directions

Start rice cooking according to directions for 1 cup cooked rice.

Clean peppers, and cut large hole in top. Clean out inside.

Boil peppers in salted water for 7 minutes. Set aside to cool.

Brown meat and onion; drain.

Add tomatoes, rice, worcestershire sauce, tomato sauce, and salt and pepper to taste.

Sprinkle cheese on top of meat mixture. DO NOT STIR. Let cheese melt on top of meat mixture.


Spoon meat mixture into peppers.

Top with additional cheese if desired (not included in recipe).

Cook stuffed peppers on a cookie sheet in the oven at 350 degrees for 30 minutes.

Makes 6 servings.

    Close to perfection! Though, I think maybe the Tomato Sauce should be one of those little cans of Tomato Paste. I had too much stuffing then realized I added 2oz rice instead of just one. Never had it before with cheese & I wasn't feeling experimental this time! - 2/8/09
