Introduction

Ingredients

    8 oz pkg Birds eye Steamfresh Broc, Carrots, Cauliflower cooked and chopped
    6 large Egg, fresh, whisked until frothy
    1/2 Tbsp Extra virgin olive oil- coat chicken and pan fry till done.
    8 oz Chicken-Perdue Boneless Skinless Chicken Breast tooled & chopped
    1/2 Cheese, Shredded Parmesan Cheese divided
    1 ear, medium (6-3/4" to 7-1/2" Sweet Corn, Fresh
    1/4 tsp Salt
    1/4 tsp Pepper, black
    3 Green Onions sliced

Tips

Serve with fresh fruit for a low cal satisfying meal. Can adjust recipe to your taste and whatever you have leftover in the fridge.


Directions

Grease or spray 8 x 8 pan. Put 3-4 cups leftover veggies or cook one 8 oz pkg steam fresh mixed veg blend chopped , place in pan. Add sliced green onion, corn cut from one cob and 1 cup chopped chicken, mix together. Sprinkle 1/4 cup cheese over it. In separate bowl whisk eggs , salt and pepper and pour over top of mixture. Sprinkle 1/4 cheese on top. Bake at 350 for 35-40 min.
