Ingredients

    16 oz Tyson boneless, skinless chicken breast
    .25 cup Mayonnaise, regular (mayo)
    .25 cup Sour Cream
    1 serving Cabot Extra Sharp White Cheddar Cheese - 1 oz.
    0.5 package (10 oz) yields Spinach, frozen
    2 serving Bacon, Wright Smoked Bacon - 2 slices
    2 tbsp Butter, salted

Tips

Serve with a fresh salad.


Directions

Preheat the oven to 375 degrees Fahrenheit. Butterfly the thawed chicken breasts. Cook the bacon in the microwave, and place in the freezer for a few minutes until they are cool enough to crumble. Thaw the spinach and then squeeze out the excess water. Mix the mayonnaise, sour cream, shredded cheese, spinach and crumbled bacon. Fill the chicken and then use wooden skewers to hold each breast closed. Coat the bottom of a baking dish with the butter, and place each stuffed breast inside of the pan. Cover with the remaining filling mixture and bake for 50 minutes.
