Mexican Style Low Carb Main Dish Mexican Style Low Carb Main Dish
Number of Servings: 9

Ingredients

    2 pounds Ground beef
    1 cup chopped onions
    2 cups chopped fresh Red Ripe Tomatoes
    2 4-oz cans Green Chilis
    2 tbsp Chili powder
    1 tbsp Oregano (dried)
    2 tsp ground Cumin seed
    2 tsp Salt
    1 tsp Garlic powder
    1 tsp Onion powder
    1 tsp Pepper, black
    6 cups cubed or diced Zucchini
    8 oz Cheddar Cheese (shredded or slices)

Directions

(If desired, preheat oven to 350 and have a 9 x 13 inch baking dish ready.)

Sauté the ground beef and onions in a large frying pan. When the beef is cooked. Add the tomatoes, green chilies and spices. Mix well. Cover and let cook for 5 minutes. Stir in the diced zucchini and let cook for 10 minutes.

Now either:
Serve from the skillet with shredded cheese to sprinkle on.
Or:
Top with cheese in the skillet. Cover and let cook until the cheese is melted.
Or:
Transfer the beef mixture to a 9 x 13 inch baking dish Top with the cheese and bake at 350 for about 15 minutes or until cheese is melted.

Serving Size: Makes about 9 cups. Serving size 1 cup
