This is one of the soups I like to make that is very low in calories, sodium, and fat while being nutritious and filling. It makes a lot, and it's nice to have as a quick addition to a meal or as a snack while adding several vegetables to your meal plan. Ingredients

    717 grams Cabbage, shredded (About 1.5 pounds)
    154 grams Celery, diced (About 5.5 ounces)
    168 grams Onions, cut in half and sliced (About 6 ounces)
    108 grams Jalapeņo Peppers, diced (4 large peppers)
    1 tsp Spice World Squeeze Minced Garlic
    794 grams Great Value Crushed Tomatoes in Puree (28 oz. can)
    2 cups Great Value Chicken Broth Reduced Sodium
    Add enough water to bring the liquid level near the top of veggies.
    Salt and Pepper to taste.

    These are the exact measurements I used when making it this time. Obviously that's not necessary for it to turn out great. :) This recipe was created so that I could track my calories better, and since I love it, I wanted to share it with you.

Tips

Bell pepper would also be great in this. I just didn't have any on hand when I made it.


Directions

Add all the ingredients to a large pot and let it simmer until it's done, about 20-25 minutes.

Makes approximately 10 1-cup servings
