Ingredients

    7 gram(s) Butter (Kerrygold) Pure Irish Gold Foil 1T=14g
    .5 tbsp NOW MCT OIL
    1.5 tbsp chopped Onions, raw
    1.5 tbsp Green Peppers (bell peppers)
    1 oz Mushrooms - Baby Portabella (Dole) (by AKHOCKEYCHIC)
    6 serving Egg - Large - Kroger - 1
    .25 oz Sorrento Part-Skim Ricotta Cheese
    1 serving cheese, Kraft Italian 5 cheese blend (1 oz or 1/4 cup)
    1.5 serving Oscar Mayer Bacon-2 skillet cooked =19gr

Directions

** Chop onions, bell pepper and mushrooms into small pieces; saute in butter/MCT oil, turn to low heat when soft.
** Beat together eggs and ricotta.
**Add to veggies, and sprinkle half the shredded Italian cheese over eggs..
** Skillet cooked bacon: either chop and sprinkle pieces over top of egg mixture or lay half slices evenly over top (I like to put two half slices on each third of the pie, so each serving gets one whole slice of bacon.
**Cook without stirring for about five minutes.
** Sprinkle rest of shredded cheese over the top of the frittata.
**Place pan under 500 degree broiler until set and edges are a little bit brown and pull away from the pan--about 3-4 minutes.
**Cut in three pieces and share or save two servings for ready-made breakfast that week!
