Ingredients

1 large overripe banana, mashed
1/3 of a 15oz. can of pumpkin pureé
1/4 cup chia seeds
1 tsp vanilla extract
1/4 tsp pumpkin pie spice
1 medium apple, cored and chopped
1 1/2 cups rolled oats
2 cups almond milk
OPTIONAL TOPPINGS
Granola
Sliced almonds or chopped walnuts
Flaked coconut
Maple syrup
Directions
In a large resealable container, mash the banana and combine the rest of the ingredients. Mix well and store covered in the refrigerator at least 8 hours before serving.
When ready to eat, portion out a serving and add your preferred optional toppings, if desired. If you want your oats warm, reheat in the microwave for 1 minute and 30 seconds on HIGH (time may vary depending on your microwave.)
This will keep in the fridge for about 4-5 days.
