Ingredients

    2 cup Beans, Black, dry cooked - no salt (by CHUTCH5)
    2 cup kernels Yellow Sweet Corn, Frozen
    1 cup Diced Tomatoes and Green Chilis, Canned (by MARSHASMUM)
    Cream cheese, Spartan brand, 8 oz.
    1 cup, chopped Onions, raw
    18 oz Smart Chicken Boneless Skinless Chicken Thigh (by GODDESSELLIE07)

Tips

Sometimes we mix the cooked rice with any leftovers and store in the fridge. It warms up wonderfully and we use it to make chicken rice burritos.


Directions

The 2 c. Cooked Black beans; could be substituted with canned black beans, drained and rinsed. Also, I had to put how many ounces of chicken used in the ingredients list. Honestly I just use 6 chicken thighs. Sometimes I use boneless, skinless chicken breasts instead. Add all ingredients except the cream cheese to a large crockpot. Cook on HIGH for about 1-2 hours. When chicken is done, remove it from the pot and fork shredd. Add the chicken back into the crockpot. Cube the cream cheese and add to the crockpot. If you like a little more heat, add 1-2 tsp of chopped jalapeņos. You can always add the hot sauce when serving if you have extremes of mild to hot taste preferences in the family! Cover and cook on LOW for 2-3 more hours, stir periodically. Serve over cooked rice or egg noodles.
