Number of Servings: 6

Ingredients

    1 ½ pounds flank steak
    ½ cup 99% fat free chicken broth
    1 cup diced tomatoes, canned
    ½ cup chopped onion
    16 extra large black olives
    1 tbsp garlic
    1 tsp Worcestershire sauce
    2 tsp brown or deli mustard
    dash of salt
    dash of pepper
    1 tsp Italian seasoning

Directions

1. Gently boil onion and garlic in chicken broth until soft, about 10 minutes.
2. Turn heat to low. Stir in tomatoes, olives, Worcestershire sauce, salt, pepper and Italian seasoning and simmer uncovered.
3. Score flank steak with a knife in a diamond pattern on both sides. Rub the mustard into both sides of the flank steak. Broil or grill flank steak to desired doneness.
4. Slice flank steak and spoon tomato olive mixture over slices.

    Very Good
    This was wonderful! My husband asked me to save the recipe and make it again sometime. It was cool out so I fixed the meat in a skillet with some olive oil. - 3/15/07
