Introduction

These are not exactly low fat but are very satisfying. If wanted you could use fat free sour cream and cheese. If you change the herbs, these are great with chilli. Ingredients

    1/2 cup Yellow Cornmeal, preferably instant
    1 cup White Flour
    1 1/2 oz (40 grams) Swiss Cheese, grated
    1 1/2 tsp Baking Powder
    1 tsp Dried Italian Herbs
    1/2 tsp Salt
    1/2 cup Low Fat Sour Cream
    1 medium Egg, beaten
    2/3 cup Non Fat Milk


Directions

Heat oven to 350 deg F (180 deg C) and spray a 6 hole muffin tin with canola spray.

Mix first 6 ingredients together in a bowl. Mix the last 3 ingredients in a jug and mix with the dry ingredients. Do not overmix,

Fill muffin holes and bake for @ 20 minutes or until skewer is dry when removed.
