Introduction

Ingredients

    1 can of black-eyed peas rinsed and drained
    1/2 of an english cucmber sliced and quartered
    1/2 red and yellow bell pepper cut into bite size pieces
    2 green onions/scallions chopped
    3 small cloves of garlic crushed
    2 Tbsp olive oil
    1 Tbsp cumin
    1 tsp salt
    1 tsp pepper
    1 tsp dried parsley/ or fresh
    1 Tbsp of vinegar

Directions

Combine black-eyed peas, cucumber, vinegar and scallions in large bowl. Saute in olive oil the peppers and garlic for 4-6 minutes. Add cumin salt pepper and parsley to peppers to combine. Let pepper mixture cool. combine all ingredients and chill for at least 2 hours. Makes 4 1/2 cup servings.

    Very Good
    I have tried this(had some BE Peas needing to be used) and although it didn't seem so tasty to read it I was surprised at how yummy it truly tastes. Great vege and low cal salad. Worth the try! - 6/25/08
