Introduction

Great for picnics and potlucks! So easy and quick to make! I prefer to make this the night before in a large zip lock baggie and store it in the fridge overnight to let all the flavors mix together. Ingredients

    1 (9 ounce) package cheese-filled tri colored tortellini
    1 (10 ounce) package frozen chopped spinach, thawed and drained
    1/3 cup grated Parmesan cheese
    2 cups cherry tomatoes, halved
    4 oz Sweet Red Pepper, diced (fresh or jarred)
    4 oz Diced Pepperoni
    1 (2 ounce) can sliced black olives
    1 (16 ounce) bottle Good Seasoning Italian- salad dressing made with White Wine Vinegar
    Salt and Pepper, to taste

Directions

1. In a large pot of salted boiling water, cook pasta until al dente, rinse under cold water and drain.
2. In a large bowl, combine the tortellini, spinach, cheese, tomatoes, peppers, pepperoni and olives. Add enough salad dressing to coat. Toss and season with salt and pepper.
