Ingredients

    3 serving Egg white-large (1 egg white=38gms)
    1 cup Best Choice Potatoes O'Brien
    1 cup Pictsweet Three Color Pepper and Onion Slices
    0.5 cup Spinach, frozen
    .5 cup, pieces or slices Mushrooms, fresh
    1 tbsp Country Crock Lite
    0.125 tsp Zatarains Creole Seasoning

Tips

Bacon, Diced Ham or Breakfast Sausage can be added if you prefer to have meat in your meal, just add it to the vegetables when cooking.


Directions

Melt country crock in a skillet then add peppers, onions, mushrooms, spinach and potatoes. Cook over medium heat until onions are browned and vegetables are tender. Separate egg whites from the yolks and add Zatarains to the egg whites and then agh the egg whites to the skillet. Scramble the egg whites while mixing with the vegetables. Serve immediately.
