Introduction

Ingredients

    2 extra small (less than 6" long Banana) Very Very ripe
    2 cup Flour, white
    2 medium Egg, fresh, whole, raw
    .5 tbsp Bicarbonate of Soda
    1.5 cup Granulated Sugar
    .75 cup Milk, 1%
    .5 tsp Essence, Vanilla
    .5 cup Butter, unsalted
    .5 tsp Baking Powder
    1 pinch Salt

Directions

In a bowl mash the bananas well.
Into a seperate mixing bowl, beat the butter and suger together until the constituency of butter cream, add the flour, baking powder and salt.
Break and beat the eggs well in a small bowl.
In a jug, add the bicarbonate of Soda to the milk, mix and add to the flour mixture together with the bananas, eggs and Vanilla Essence.
Blend the mixture well, either by hand or in a mixer.
Spoon into two 1lb loaf tins.
Bake in a pre-heated (180C Conventional/160 Fan oven) for one hour.
Test with a skewer or knitting needle.
Set to cool on a rack, then enjoy.

Serving Size: Makes 2 1lb loaves - about 14 1cm pieces
