Ingredients

    1 cup, cubes Eggplant, fresh
    .5 cup, sliced Zucchini
    .33 cup, chopped Peppers, sweet, red, fresh
    3 slice, medium (1/8" thick) Onions, raw
    .5 tbsp Eden Selected Toasted Sesame Oil
    1 tbsp Soy Sauce
    1 tbsp Olive Oil

Directions

Saute vegetable in olive oil until soft. Add soy sauce and toasted sesame oil. Serve over brown rice.
