Ingredients
THE PIE CRUST:
1 cup Whole Wheat Flour
75 tsp Salt
Sift together dry ingredients.
Cut .66 cup Butter, unsalted, cold into flour mix until texture is like coarse cornmeal.
Add .5 cup (8 fl oz) Water, ice cold and combine gently with fork. More water MIGHT be needed to make dough into ball.
Roll out dough between parchment paper. Place into 9 inch pie plate. Set into refrigerator while you make the filling.
THE FILLING:
Combine First 3 ingredients in separate bowl and mix well.
1 cup Kroger Low Fat Ricotta Cheese (by KJOPAULSON)
3 large Egg, fresh, whole, raw
2 tbsp Half and Half Cream
In frying pan add
1 1tsp Olive Oil
.5 medium (2-1/2" dia) Onions, raw, sliced thin
1 large (2-1/4 per lb, approx 3- Peppers, sweet, red, fresh, sliced
3 clove Garlic
Cook till tender. Add
5 oz Spinach - Dole Baby Spinach and wilt down.
Add the spices:
1 tbsp Parsley, dried
1 tbsp Oregano, ground
Combine veggies and cheese mixture. Pour into pie shell. Cook in preheated oven at 350 F for 30 to 35 minutes.
Tips
Keep the crust cool for best results.
Directions
I cooked at 375 for 35 minutes, but I think 35 minutes at 350 might have given me a more golden crust and a fully set pie.
