Ingredients
-
1 (15 oz) can S&W 50% Less Sodium Pinto Beans, drained and rinsed
1 pkg Trader Joe's Beef-less Ground Beef
1 1/2 TB Engage Organics Mexi-Mix Salt Free Blend
1/2 tsp Original No Salt Sodium-Free Salt Alternative
1/2 tsp Morton Lite Salt 50% Less Sodium Than Table Salt
1 cup of water
Olive oil (optional)
Directions
IF pressed for time or wishing to eliminate oil from your diet, skip this step. It is not figured in the Nutritional analysis. Heat a skillet and add cold olive oil.
Next, add entire pkg of the Beef-less Ground Beef and brown. It is already cooked and you don't have to worry about not cooking enough. Add can of beans.
IN a glass measure, stir and mix Mexi-Mix salt free blend into 1 cup of water and pour into skillet. Bring to a boil, turn heat to med-low and cover pan. Cook for 7-8 minutes until crumbles and beans have absorbed most of the water.
Remove from heat, allow to cool slightly, and use to fill tacos or stuff potatoes.
