Ingredients

0.25 tsp Pepper, black
0.5 tsp Salt
1.0 tbsp Canola Oil
1.5 cup kernels Yellow Sweet Corn, Frozen
2.0 cup, chopped Onions, raw
6.0 slice, medium (1/4" thick) Red Ripe Tomatoes or 6 whole canned tomatoes chopped
4.0 cup Vegetable Broth
2 oz can green chiles
6.0 cup Cannellini Beans
2.0 tbsp chili powder
1.5 tsp ground cumin
Directions
1. Chop onion and measure out spices.
2. Add oil to a Dutch oven or large pot
3. Sautee onion for 5 minutes on medium.
4. Add garlic. Sautee for 1 minute
5. Add cumin, chili powder, thyme, corn and tomatoes. Cook for 5 minutes on medium heat. Mash 1 can (2 cups) of
beans with a fork while mixture is
cooking.
6. Add vegetable stock and 2 cups of beans. Cook 5 minutes or until a rolling boil with lid on.
7. Add mashed beans.
8. Reduce heat to low or medium low to summer. Cook at least 20-25 minutes without a lid.
