Ingredients

1 medium potato
1 medium onion
1 pepper
1lb raw pork breakfast sausage
1 tsp salt
1 tsp paprika
1 pinch of cayenne pepper
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp chili powder
1/2 tsp cumin
Optional (not calculated)
1 egg
freshly cracked black pepper (to taste)
Tips
Use a well-heated cast iron skillet to get a fabulous sear on the pork.
Directions
Peel and chop your potato into bite size pieces. Boil.
Saute pork sausage in a dry pan and drain as much fat as possible.
Chop up your onion and pepper.
When pork is cooked and starting to brown, add onion and pepper.
Drain potato and add to pan.
Add all spices (you can mix them ahead of time to save time if you wish).
Mix everything in the pan well until potatoes begin to get golden, crispy edges.
Serving Size: Makes 4 1 1/4 cup servings
