Introduction

Super easy, and fun. Not to mention delicious. Recipe is easily altered to serve as many people as you like. Same recipe is awesome for boneless pork too.
You can put white wine in the marinade too, which is really good- about a half cup.

Ingredients

    2 pounds boneless, skinless chicken breast, cut into 1-2 inch cubes.

    marinade-
    Lemon zest 1 tsp
    Lemon juice, 1 cup
    Fresh oregano leaves about a half cup unpacked
    Onions, raw, 1 small
    Garlic, 3 cloves
    Olive Oil, .25 cup
    Salt, 1 tsp
    Pepper, black, 1 dash





Directions

rinse and dry chicken and cut into cubes- 1 to 2 inches depending on your preference.
Place remaining ingredients in food processor or blender. process until combined, and smooth.
Marinade chicken at least 1 hour, up to overnight, shake it up every so often.
Skewer chicken or place in grill basket (you know, one of those flip overable mesh metal things you grill fish in) I use those often for grilling, just spray it first with cooking oil to prevent sticking. Discard leftover marinade.
Grill on medium heat on each side for about 5-7 minutes a side- until cooked through, then turn heat up to high, and grill on each side until you get the color you like, from golden brown to well done. The last part you should hover over the grill for, it is easy to burn things on high. Serve with tzatziki sauce, (greek garlic cucumber yogurt) I have a recipe.......

    Excellent. I used Newmans Own Lighten up Balsamic Vinagrette instead of the olive oil. I marinated the chicken for 4 hours and it was really tasty. Excellent flavor. Will make this again and again! - 8/24/09
