Ingredients
-
16 oz Ground Pork
16 oz Ground beef, lean
2 large Egg, fresh, whole, raw
.25 cup Bread crumbs, dry, grated, plain
2 tsp unpacked Brown Sugar
.25 tsp Allspice
.25 tsp Baking Powder
.25 tsp Nutmeg, ground
2 tsp Salt
1 tsp Pepper, black
1 tbsp Butter, salted
1.5 cup Beef broth, bouillon, consomme
3 tbsp Cream - Dairyland 18% Coffee Cream
.25 cup Flour, white
.5 cup, chopped Onions, raw
Directions
FOR MEATBALLS
Whisk egg and cream in bowl. Stir in bread and set aside. Mix together (if possible using a stand mixer with paddle attachment - I did it manually with a rubber spatula) pork, onion, salt, sugar, baking power, nutmeg, allspice, and pepper. Add bread mixture and mix until there are no dry bread chunks. Add beef and mix until just incorporated. Using moistened hands, form generous tablespoons into meatballs.
In heated skillet brown meatballs. Transfer to plate. Next, make the gravy and I put the meatballs and gravy in a crockpot for a few hours to get it really tender. If you don't want to use a crockpot, you could cook the meatballs all the way through in the skillet, then simmer in the gravy for 10 mins in the same skillet.
FOR GRAVY
Pour off and discard oil in pan, leaving the brown bits. Return pan to medium-high and melt butter. I deglazed with red wine (this is not in the recipe, but a little bit of wine never hurts). Add flour and cook, whisking constantly. Slowly whisk in broth, scraping bits. Add sugar and bring to simmer. Reduce heat to medium and continue to cook until gravy is reduced (about 1 cup). Stir in cream and simmer. Now add meatballs back to pan or transfer everything to crockpot.
