Ingredients

4 small zucchini
1 tblsp. olive oil
2 0z. goat's cheese, cut into thin strips
small bunch of mint, finely chopped
black pepper
Directions
1. Cut out 4 rectangles of foil, each large enough to enclose 1 zucchini. Brush each rectangle on one side with a little olive oil.
2. top and tail the zucchini, then cut a thin slit along the center of each one.
Insert the goats' cheese into the slits, add a little mint and sprinkle with oil and pepper.
3. wrap each zucchini in a piece of foil and place on a baking tray. Bake in a preheated oven, 350*f, for about 25 minutes; or 20 minutes and then brown under a hot grill.
