Ingredients

    30g dry buck Wheat
    1/4 red pepper
    1/4 Yellow Peppers
    1/4 orange or green pepper
    1 green chili
    1/5 medium Onion
    4 Tomatoes,
    1/2 tbsp Tomato puree
    1 tbsp Balsamic Vinegar
    3 basil leaves chopped finely

Directions

1. Put buck wheat in boiling water and simmer 10-15 mins
2. Chop garlic & chili finely and chop onion
3. Sautee in a little oil for 2-3 mins
4. Chop other ingrediants roughly.
5. Add peppers and sautee for another 2-3 mins. The add tomatos
6. Let dish simmer until tomatos begin to soften
7. Add balsamic vinegar and tomato puree.
8. Stir and leave to simmer for 3-4 mins
9. Drain Buckwheat and add to pan. Stir and the sprinkle in basil and serve
