Ingredients

    5 serving Johnsonville Italian Sausage Sweet (1 Link) (by KALPASHE)
    1.75 cup Hunt's Fire Roasted Diced Tomato
    4 serving 1 large egg (per the egg board) 50g

Tips

This is great for a keto or low carb diet. If you use compliant sausage, it will also work for Whole30.


Directions

Preheat oven to 350 degrees. In a medium frying pan over medium heat, cook italian sausage. Once cool enough to handle, remove casing and chop finely (or use ground sausage). Add herbs as desired (Italian seasoning, salt and pepper, oregano, crushed red pepper flakes, etc). Crack one egg in each quarter of the pan, evenly separated. Bake in oven for 15 minutes or until egg white is set and yolks are still runny. Serves 4.

As an alternative, after cooking sausage, place 1/4 of sausage and 1/4 of tomatoes into ceramic ramekins. Season as desired and break egg into center. Bake as directed.
