Ingredients

    15.0 ounces Chicken Breast (cooked), no skin, roasted
    1.0 cup, chopped Onions, raw
    3.0 serving 1 Med. Green Bell Pepper
    3.0 pepper Jalapeno Peppers
    1.0 large whole (3" dia) Red Ripe Tomatoes
    1.0 cup Tomato Sauce
    6.0 tbsp Lime Juice, juice of 1 lime
    1.0 tbsp Extra Virgin Olive Oil
    2.0 cup Brown Rice, medium grain

Directions

Sautee chicken in oil, then add veggies. Once soft add tomato sauce and lime and let simmer for 25 minutes. Cook rice.
