A great vegetarian, summer salad with lots of color and flavor! A great vegetarian, summer salad with lots of color and flavor!
Number of Servings: 8


    1 3/4 cup black beans, drained and rinsed
    2 cups frozen corn, do not thaw
    3 large tomatoes, seeded and diced
    1/2 large red onion, chopped
    1 small bunch cilantro, chopped
    Juice of one lime
    1 T. olive oil
    1 tsp red wine vinegar


Combine beans, corn, tomatoes, onion and cilantro into large bowl. In separate small bowl, mix olive oil, lime juice, and vinegar; combine well. Pour over salad ingredients and toss lightly to combine. Chill before serving.

*Place lime in bowl when finished for garnish and a little bit more lime flavor
*Add cubed avocado just before serving

Makes 8 servings.
