Ingredients

1 head, medium (5-6" dia) Cauliflower, raw
2 large Eggs
2/3 cup Almond Flour
2 Tbsp Ghee
1/2 tsp Turmeric
1/2 tsp Salt
1/4 tsp Black Pepper
* 1 tsp nutritional yeast (not added in nutritional info)
Directions
NOTE before you start - It’s essential that the cauliflower be boiled or steamed (about 8 minutes) until fork tender, not mushy, to create just enough moisture to help the fritters stick together and not crumble. Then strain and lightly pulse florets in food processor to create tiny rice-like bits.

Add cauliflower to a large pot covered in water. Bring to a boil and boil for 8 minutes. Strain. Add the florets into a food processor and pulse until riced.
Add cauliflower, eggs, almond flour, nutritional yeast, turmeric, salt and pepper to a mixing bowl. Stir well to combine. Form into patties.
Heat the ghee over medium heat in a skillet. Scoop about half the mixture into three fritters and cook until golden brown on each side, 3-4 minutes. Set aside until the rest of the fritters are cooked. Serve hot.
Alternative cooking method: Can bake fritters, line baking tray with parchment paper - arrange fritters on tray. Bake at 350°F for 20-25 minutes, flipping halfway through.
