Ingredients

    2 Tablespoons extra virgin olive oil
    1 onion, diced
    2 carrots, diced
    1 green bell pepper, diced
    1 celery stalk, diced
    2 cloves garlic, minced
    1 teaspoon oregano
    1 teaspoon basil
    (I added 1 bay leaf.)
    4 cups chicken broth
    1 (15 oz) can tomato sauce, or 2 fresh tomatoes, chopped
    1 / 2 cup alphabet pasta (I used 1 cup elbow noodles)
    Salt and pepper

Directions

1. Saute vegetables and garlic in olive oil for 5 minutes over medium heat. Stir in the oregano and basil.
2. Add water/broth and bring to a boil. Simmer 15-20 minutes or until vegetables are tender.
3. Add tomato sauce and pasta, and simmer gently until pasta is cooked , about 10 minutes.
4. Add salt and pepper to taste before serving, and garnish with parmesan cheese.
