Ingredients

    8.0 oz 80/20 ground beef chuck
    0.5 serving 1 Med. Green Bell Pepper
    0.5 cup, chopped Onions, raw
    2.0 tbsp Ortega taco seasoning mix
    1.0 serving Egg - Large (1 egg)

Directions

In a large bowl mixed together ground chuck, chopped onion, and chopped bell pepper. Add in one egg and taco seasoning and mixed will. Shredded cheese would probably also be a good additive if you wanted to mix it in as well. I did add a little extra salt, pepper, and garlic powder. The taco seasoning I used was low sodium. When mixed well, roll into size of your choice and place on baking pan. I rolled the mixture into about half-dollar sized balls. Bake on 350 for 30 to 40 minutes depending on your oven. I baked my meatballs until they were well done. I served mine with Spanish flavored cauliflower rice.

Serving Size: Makes 16 silver dollar sized meatballs. 4 meatballs per serving.
