Introduction

Wacky Cake, also known as Depression Cake, has been referred to as War Cake as well, and dates back to World War I, a time when sugar reduction was encouraged. During the Great Depression when dessert became a luxury that few could afford, Wacky Cake made a resurgence.

Containing no milk, eggs or butter, this cake is ideal for people with restrictive diets. By substituting the Sugar with a No Calorie Sweetener, the calories are further reduced.

Ingredients

    1 1/2 Cups All-purpose Flour
    1 Cup Spenda-type no calorie sweetener
    1/4 Cup Unsweetened Cocoa Powder
    1/2 tsp Salt
    1 tsp Baking Soda
    1 tsp Vanilla Extract
    1 tsp White Vinegar
    1/3. Up Olive Oil
    1 Cup Cold Water

Tips

The Nutritional Value is for a Cake without icing or frosting. If using icing or frosting, wait for cake to cool before spreading.


Directions

1. Combine the flour, Splenda, cocoa powder, salt and baking soda in a large mixing bowl.
2. Mix the dry ingredients together with a whisk.
3. Create 3 “wells” or “depressions” in the dry mixture.
4. Add the Vanilla, Oil and Vinegar in each of the “wells” (1 wet ingredient per well).
5. Pour the cold water over the mixture.
6. Mix well with an electric hand mixer.
7. Pour batter into a greased 8x8 square pan.
8. Bake in a preheated 350 F oven for 30-35 minutes, until toothpick inserted in centre comes out clean.
