Introduction

I used this recipe to "hide' veggies for my children. They absolutely love these muffins. The recipe makes a LOT of muffins. Ingredients

    1 c. white flour
    1 c. whole wheat flour
    2 c. shredded carrots
    1 1/4 c. sugar or splenda
    1 apple, shredded
    3/4 c. raisins
    3/4 c. shredded coconut
    1 Tbsp. cinnamon
    2 tsp. baking soda
    1 1/2 tsp. vanilla
    1/2 tsp. salt
    3 large eggs
    1 c. canola oil

Directions

Heat oven to 375. Grease muffin tins. Mis all ingredients except eggs and oil. (Mix eggs and oil seperately). Then, add to flour mixture. Bake approximately 25 minutes. Serve warm. This makes approximately 30-40 muffins.
