Introduction

Number of Servings: 6

Ingredients

    1 pound ground turkey
    1 can (14.5 ounces) diced tomatoes
    1 can (15 ounces) whole-kernel corn
    1 can (15 ounces) black beans
    1 teaspoon paprika
    1 teaspoon cumin
    1 teaspoon oregano
    2 teaspoons garlic powder
    1/2 teaspoon red pepper (cayenne)
    1 tablespoon chopped fresh cilantro

Directions

Brown turkey in large pot. Drain well. Add the tomatoes, corn, black beans, paprika, cumin, oregano, garlic powder and red pepper. Simmer 15 to 20 minutes. Add cilantro; simmer 5 to 10 minutes longer. Serve with fat-free sour cream and crackers, if desired. Makes 6 servings.
