Introduction

This is a great casserole for vegetarians, however, it is incredible for meat eaters as well. You won't miss the meat. I also eat it with tortilla chips sometimes. Number of Servings: 6

Ingredients

    2 cups cooked rice
    1 can black beans (rinsed)
    1 can corn
    2 cups shredded cheddar
    8 oz. picante sauce
    8 oz. sour cream
    1 can tomatoes with green chilis

Directions

Mix together all ingredients except only use 1-1/2 cups of the cheese. Put in 9 x 13 pan. Top with remaining cheese and bake at 350 to 400 for 1 hour. *350 works well for me.
