Ingredients

    1/4 cup golden raisins
    2 cups unsweetened almond milk
    2 eggs, separated
    1/4 cup turbinado sugar
    3 packets SweetLeaf stevia (to taste)
    1/4 tsp cinnamon, ground
    1 dash Salt

Tips

If you use almond milk, it may not thicken up quite as much, but it's still tasty. You can use regular milk for this if you want, in the same amounts.


Directions

Add raisins to hot (scalded) almond milk and let stand 15 minutes. Beat egg yolks, salt, and sugar until thick and pasty. Add hot milk, raisins, rice, and cinnamon, and cook in a double boiler until thickened.

Beat egg whites to a stiff peak. Fold beaten egg whites into pudding mix. Pour into serving size containers and chill.
