Ingredients

52 oz Pasta, Lasagna Noodles
76 oz 93% Lean Ground Beef
8.33 cup Spinach, fresh
8.33 cup Ricotta Cheese, part skim milk
8.33 cup Parmesan Cheese, grated
33 large Egg, fresh, whole, raw
12 cup Tomato Sauce
Directions
Boil lasagna noodles until aldentie
Prepare spinach by removing stems, rinsing and chop
Brown Ground Beef in skillet, drain. reserve meat at room temp.
Cook spinach in boiling water, drain well.
Add into large bowl the Meat, Ricotta, and Parmesan cheese, eggs, and spinach. and mix.
Place lasagna on a flat surface, spread entire strip with meat mixture, and roll from end to end. Spoon one cup of tomato sauce on the bottom of the pan to prevent sticking. Add Lasagna rolls, then pour enough of the remaining sauce over rolls to prevent the noodles from drying out. Bake at 350 degrees for 30 minutes. Serve hot with a side of sauce and Parmesan cheese.
