Introduction

I usually make this colorful side dish with some baked fish but you can easily cook up some diced chicken and mix it all together for a one-dish meal. I also use Italian seasoning instead of just oregano but I couldn't find it on the ingredient list. Super quick to put together. I also choose to cut my zucchini and wedges instead of slices I think it cooked better in the oven. Just cut your zucchini lengthwise and then into strips and then slice into wedges. Ingredients

    2.0 cup, sliced Zucchini
    1.0 serving Angel Sweet Tomatoes - Sunset ( 1 serving 85g Approx 9 tomatoes)
    2.0 clove Garlic
    0.3 cup Parmesan Cheese, grated
    1.0 tsp Oregano, ground
    0.5 tsp Salt
    0.25 tsp Pepper, black
    0.25 cup Parsley

Directions

Cut up zucchini and tomatoes Comet us together with some crushed garlic and all the seasonings. Mix in the parmesan cheese and then put in a casserole dish sprayed with nonstick cooking spray. Bake at 350 degrees for approximately 25 to 35 minutes depending on how well done you like your vegetables.

    Very Good
    I love this recipe. Its easy and tastes very good. The only change i made is to add chopped onion and if I don't have the cherry tomatoes, I just cut up a roma.
