Ingredients

2/3 cup Lentils, cooked, drained and save the liquid (optional but worthy)
1.5 cup Kirkland Organic Quinoa (dry) (by S43824)
1/4 cup, chopped Onions, raw
1/4 cup, chopped Peppers, sweet, red, fresh
2 cloves Garlic, minced
1/2 tsp salt
1/4 tsp Cumin - ground (1 tsp) (by INFORM555)
1/4 tsp Cinnamon, ground
1/8 tsp clove, ground (optional)
3/4 tsp Chili powder
1/2 packet serving Goya Sazon Low-Sodium (per packet) (by EKALEEGUS) (optional)
2 tbsp Kirkland Signature Pure Olive Oil (by NEWYESI2009)
1/2 tbsp Heinz Apple Cider Vinegar (by MOMMYPANKRATZ)
2.25 cups (8 fl oz) Water, tap* (if lentils dry and home cooked, add the liquid and measure to 2.25 c or add water to liquid to get to measurement)
Directions
Place pot on stove top and heat on medium heat
Add oil
Add salt, onion and pepper and cook for 3 mins or until softened
Add spices-cumin, clove, chili, cinnamon, and goya seasoning- and cook until fragrant
Add garlic and cook until fragrant
Add drained lentils and quinoa,
Mix evenly in pot then add water and quinoa liquid (optional)
Stir, bring to a boil, then cover and lower heat to low and cook for 20 mins or until all liquid is absorbed .
Serving Size: 5 1-c or 8 1/2-c servings
