Ingredients

    1 eggplant, peeled (yield from 1 Eggplant, fresh
    01.25 cup Mids Pizza Sauce
    5 serving Armour Turkey Pepperoni 16 slices
    1 cup, pieces or slices Mushrooms, fresh
    10 tbsp Green Peppers (bell peppers)
    15 jumbo Black Olives
    10 oz Mozzarella Cheese, part skim milk

Tips

Great for a low carb dieter. It can be a bit hard to transfer from the cookie sheet to a plate, but it's worth the effort to have a low carb comfort food treat! I make 5 at a time (or however many I can get from my eggplant) and freeze them.


Directions

Slice eggplant lengthwise and place on parchment paper in 5 squares to make 5 equal "pizzas." Add sauce, pepperoni and other ingredients, top with cheese. These can be frozen. When ready to bake, remove from freezer and move from parchment paper to a greased cookie sheet and bake at 400 for about 20 minutes or until cheese is bubbly.
