Number of Servings: 6

Ingredients

    2 c. instant brown rice
    10 oz. frozen cooked, peeled and deveined small shrimp (71-90 count size)
    2 tsp. canola oil
    1 c. frozen green sweet soybeans
    5 oz. fresh snow peas (strings removed)
    1 1/4 c. canned (packed in natural juice) pineapple chunks (drained)
    1/2 c. purchased sweet and sour sauce

Directions

1. Cook 2 cups instant brown rice according to package directions and thaw 10 oz. frozen cooked, peeled and deveined small shrimp (71-90 size) under cold runing water.
2. In wok or large skillet, heat 2 tsp. canola oil and stir-fry 1 c. frozen green sweet soybeans (shelled) for 2 minutes. Add 5 oz. fresh snow peas (strings removed). Stir 1 more minute. Add 1 1/4 c. canned pineapple chunks, thawed shrimp and 1/2 cup purchased sweet sour sauce. Continue stir-fry cooking until all ingredients are heated through. Serve atop brown rice.
