Ingredients

    3 Large Boneless Skinless Chicken Breast
    1/2 cup Colby and Monterrey Jack Cheese shredded
    1 tbsp Kraft Miracle Whip Light Dressing
    1/2 cup, Chopped Fresh Broccoli
    1/2 cup Diced Red Bell peppers
    1/4 cup Diced Sun Dried Tomatoes
    2 tbsp Extra Virgin Olive Oil (EVOO)
    2 tbsp Cavendar's Greek Seasoning mixed with Lowery's Seasoning Salt.

Directions

1. Preheat oven to 425 degrees F.
2. Butterfly the chicken breasts.
3. Chop broccoli florets into small pieces, place in bowl and add 2 tbsp water. Cover with plastic wrap and microwave for 1 minute. Drain excess water.
4. In a bowl mix broccoli, cheese, bell pepper, sun dried tomatoes, and Miracle Whip dressing until well mixed.
5. Divide mix evenly and place into each butterflied chicken breast. Close up chicken breasts and pin together with tooth picks.
6. Season chicken breasts with mixed seasons.
7. Drizzle EVOO into an iron skillet and heat to medium high temp.
8. Cook chicken breasts for 2-3 minutes per side.
9. Place iron skillet in oven and cook for 12-15 minutes (or until chicken temp is 165 degrees. Let rest for 5 minutes before eating.
