1 oz Crystal Farms Marble Jack Cheese (a blend of Colby & Monterey Jack)
4 oz Ground beef, lean
Tips
this recipe can be doubled or tripled according to your needs. I have reduced the cheese etc to reduce the sodium . Potassium is there, nothing I can do.

Preheat oven to 350 degrees F.
In microwave heat zucchini halves 2 at a time for about 2 minutes. let cool. scoop out centers. mix ground beef with cheese., peppers, onion and zucchini center. Stuff center of zucchini with beef mixture. bake at 350 until ground beef is cooked . serve warm
